We taste every barrel of Shiraz and Cabernet Sauvignon 1 year after vintage to select the best wines for further oak maturation as our Reserve blend. The wines are carefully chosen for their intensity and complexity of fruit, mouthfeel and the quality of tannins, oak integration and their overall balance and harmony.
Similalrly, we taste each barrel of chardonnay after nine months of maturation in new french oak to select the base for our Reserve Chardonnay. These barrels are then blended and bottled for a further 4 years maturation prior to release.
All reserve wines have been created and released with longevity in mind. Maturation in oak and bottle enable them to be enjoyed upon released and further enhanced with careful cellaring.
